The last month has easily been the longest I've ever cooked for myself, and it's been great. Being free of the overpriced college cafeteria has given me a lot of leeway to make good food. A few meals from the last week:
Fried rice. Cheap, easy to make with a rice maker, and an easy destination for leftovers in the fridge.
Butternut squash ravioli from Costco. We got a friend to drive us out, and loaded up on frozen noodles, meat, and snacks.
Ciabatta Pizza. I'm too lazy for dough, so I've been using ciabatta and sourdough as bases. A little basil and garlic kick stuff up.
Soba (Japanese buckwheat noodles), my go-to for lunch. They take about 10 minutes to make, fill you up for hours, and have a little more protein and fiber than other Asian noodles. The sauce is 1 part tsuyu, 2 parts water, with a little wasabi, mustard, and chili powder.
Tomato bagel panini. Inside: sweet onions, mozzarella, and feta.
Curry rice. My host mom in Japan made this all the time, and it's become one of my favorite comfort foods. Japanese curry is sweeter and less spicy than Indian curry, almost halfway between curry and a thick beef stew.
